  • 3 cupscooked and cooled rice
  • 3 tbspYo Amma Indian Chili Crisp
  • 1 tbspgrated parmesan cheese
  • ½ tspkosher salt

For the Chili Crisp Caesar Dressing

  • ¼ cupmayonnaise
  • 2 tbspfreshly grated parmesan cheese
  • 1 tbspYo Amma Indian Chili Crisp
  • 1 tbsplemon juice
  • 1 tspDijon mustard
  • 1garlic clove, finely grated 2 tbsp water (as needed to thin)

For the Salad

  • 2romaine hearts, chopped
  • ½ cupshaved parmesan cheese
  • Freshly cracked black pepper

For Finishing

  • Additional parmesan cheese

Instructions

    Preheat the oven to 425°F. In a large bowl, combine the rice, Yo Amma Indian Chili Crisp, parmesan cheese, and salt. Spread onto a parchment-lined baking sheet in an even layer. Bake for 30–35 minutes, stirring once halfway through, until the rice is deeply golden and crispy. Allow to cool slightly.

    In a bowl, whisk together the mayonnaise, parmesan cheese, Yo Amma Indian Chili Crisp, lemon juice, Dijon mustard, and garlic. Add water as needed until the dressing reaches your desired consistency.
