For the Air Fryer Potatoes
- 1 lbYukon Gold potatoes, diced small
- 1 tbspavocado oil
- 1 tspYo Amma Seasoning
- Salt and black pepper, to taste
For the Pico De Gallo
- 2ripe tomatoes, diced
- 1/4 cupred onion, finely diced
- Juice of 1 lime
- Salt, to taste
For the Eggs
- 8eggs
- Salt and black pepper, to taste
For the Burritos
- 4large flour tortillas
- 1½ cupsshredded cheddar cheese
- 4 tbspYo Amma Indian Chili Crisp

Preheat the air fryer to 400°F. Toss the potatoes with avocado oil, Yo Amma Seasoning, salt, and black pepper. Air fry for 15–18 minutes, shaking halfway through, until golden brown and crispy.

Combine the tomatoes, red onion, lime juice, and salt in a bowl. Mix well and set aside while you prepare the remaining ingredients.

Whisk the eggs with a pinch of salt and black pepper. Cook in a nonstick skillet over medium-low heat until softly scrambled. Remove from the heat while still slightly glossy.
