This version keeps things simple, letting the lentils do the work before finishing everything with a generous spoonful of Yo Amma Indian Chili Crisp.   • 1 cuptoor dal (split pigeon peas)
  • 4 cupswater
  • 1 tspturmeric
  • 1 tspsalt, plus more to taste

For the Tadka

  • 2–3 tbspYo Amma Indian Chili Crisp

For Finishing

  • Fresh coriander, chopped
  • Steamed rice or warm roti, for serving

Instructions

    Rinse the toor dal until the water runs mostly clear. Add the dal, water, turmeric, and salt to a pressure cooker or Instant Pot. Cook on high pressure for 10 minutes and allow the pressure to release naturally. Open the lid and whisk the daal until smooth and creamy. Add additional water if needed to reach your desired consistency.

    Rinse the toor dal thoroughly. Add the dal, water, turmeric, and salt to a large pot and bring to a boil. Reduce the heat to a simmer and cook for 30–40 minutes, stirring occasionally, until the lentils are completely soft. Whisk or stir vigorously until creamy. Add more water if necessary.
