Pro Tips

  • Cold, day-old rice is the secret to great fried rice. Fresh rice contains too much moisture and can become mushy, while chilled rice fries up beautifully and develops those coveted crispy bits. If you're using rotisserie chicken, simply shred it and add it during the final toss for an even quicker meal.
  • Fried rice is all about building flavor quickly, which makes it the perfect match for Yo Amma Indian Chili Crisp. Instead of relying on multiple sauces and seasonings, the chili crisp brings warmth, crunch, and layers of spice in a single spoonful. Combined with eggs, protein, and crispy rice, it's an easy weeknight dinner that never gets boring.
